gone Strawberries!

Most days I am going bananas not strawberries. But as the strawberry season in Michigan gets closer I am getting amped up to make everyone crazy with all my strawberry recipes. I really don't have that many. Not enough to write a cook book with or anything, but enough. Over the next week I'm gonna unload a few on you.

I didn't even post a picture. WOW, that was really radical. How about if I give the Strawberry Cake recipe another shot? It is a family favorite after all. I have to say I have always been a bit self conscience of the fact that the recipe calls for a box cake mix. Like I was cheating and not really making it from scratch or something. BUT you know what?! I am over it.....this cake is so doggone moist and yummy, I don't really care if someone thinks it is a lesser recipe.

See what happens when one is over 40....you get sassy and fiesty about stuff like strawberry cake recipes!


So here it is again...Strawberry Cake. I have to say this cake is better when made the day before and refrigerated before you frost it. Or at least if it is allowed to completely cool and is only chilled for a bit in the frig. And then you must store leftovers in frig....if there are any.

You can make this in a 9x13 in a layer cake3 thin layers is best or two if you are like me on the day I made this cake, for a baby shower....for a baby girl, of course.



Cupcakes are always good too. Or double the recipe and make a big ol sheet cake. Perfect for a potluck or picnic!

STRAWBERRY CAKE
printable recipe

1 white or yellow cake mix
4 eggs (YES 4! get over it!)
1 cup of mashed fresh strawberries, no sugar added (or you are allowed to used thawed frozen strawberries)
3/4 cup vegetable oil
1- 3 oz. package strawberry Jell-O

frosting:
1 stick of butter softened NOT melted
1 pound of powdered sugar
1 teaspoon of vanilla
**enough mashed strawberries to get frosting to the correct consistency

preheat oven to 350
MIX cake ingredients together well


ADD strawberries


MIX for a minute more. Pour into greased and floured pans.

Just in case you have never greased and floured a pan, I thought I would give you a quick demonstration...I use crisco and unbleached flour.









Tap the flour to all corners then tap excess out into a sink.



BAKE for 20-30 minutes. Check with a toothpick when it comes out clean remove and let cool completely before frosting.
Aren't these perfect for a little girls birthday? Or a picnic....well they are just perfect for any occasion TRUST ME on this people!

  1. Strawberry cake seems to be a big thing over here, too. I, personally, am loving that this is a semi-home made type recipe. All the GF Strawberry cake recipes are a pain! I can't wait to try this with a gluten free cake mix! And cupcakes, yum! I'll let you know how they turn out. :)

    BTW, I saw all the flooding going on in OK. I hope all is well and dry at the Ranch!
